Candy Coated Pecans

Pittsburgh is always such a gloomy city when the Steelers lose. Today was another one of those nights as we lost to the Cincinnati Bengals. On the optimistic side, the candy coated pecans I made for the game turned out amazing. For awhile Whole Foods put these out as samples and I would make a trip there just to eat them. They are so addicting!! This recipe will not let you down.

1 egg white
1 teaspoon ground cinnamon
1/2 cup white sugar
1/2 cup brown sugar
3/4 teaspoon salt
2 tablespoons vanilla extract
1 pound pecan halves

1. Preheat oven to 250 degrees F (120 degrees C). Lightly butter a baking sheet or use parchment paper.
2. In a bowl, beat the egg white until foamy. Mix in cinnamon, white sugar, brown sugar, and vanilla extract. Mix well. Stir in pecan halves, stirring until well coated. Spread on baking sheet.
3. Bake in preheated oven for 1 hour, stirring every 15 minutes.
