Dark Chocolate Yogurt Cake




You know its a good cake when a 5 month old who had not had any solids yet was chomping down on it. This cake is so moist and yummy. It is also the easiest cake to whip up too. I made it yesterday and hubby enjoyed it as well after a long hard day of playing golf =P


I got this recipe from little corner of mine, What a treat. I'll sure to be making this again!!


Ingredients:
1 cup all purpose flour
1/2 cup cocoa powder (I used Hershey's Special Dark Cocoa)
2 tsp. baking powder
1/4 tsp. salt
1 cup white sugar (I used 3/4 cup of sugar, next time I'll probably reduce it to 1/2 cup)
1 cup plain yogurt
3 large eggs, lightly whisked
1 Tbsp strongly brewed coffee
1/2 cup canola oil


Directions:
1. Preheat oven to 350 degrees F. (Grease a 9x5 loaf pan)
2. In a large bowl, sift in flour, cocoa powder and baking powder. Add in salt, sugar. Stir to mix well.
3. Then add in all the wet ingredients: yogurt, eggs, coffee and oil. Use a whisk and whisk everything together until blended.
4. Pour into the prepared loaf pan and bake for 50 minutes or until toothpick inserted in middle comes out clean. Cool in pan for 5 minutes before taking it out to cool completely on wire rack.
