Braised Soy Sauce Chicken


I love soy sauce chicken. There is nothing like eating a bowl of rice with soy sauce chicken. It is simple to make yet completely satisfying. I always throw in some boiled eggs since DH loves Lu Dan (Braised soy sauce eggs) even though he only eats the egg white and not the yolk which is a complete waste in my opinion. I would eat it all for him, but then that wouldn't do my cholesterol any good. There were lots of extra sauce left from the chicken so tomorrow I plan to braise more eggs so DH can take them for lunch.

Ingredients:
5 pieces of chicken legs
2 tablespoon cooking oil
1 cup dark soy sauce
4 tablespoons brown sugar
3 pieces of star anise
1 cinnamon stick
3 cloves of garlic
few pieces of ginger, sliced into thin pieces
water to cover chicken
1 teaspoon 5-spice powder
2 tablespoon of corn starch

Directions:
1. In a pot/pan, heat up cooking oil and brown chicken for a few seconds.
2. Add soy sauce, brown sugar, star anise, cinnamon stick, garlic and ginger.
3. Add water until chicken is completely emerged.
4. Reduce heat to medium. Let chicken simmer in soy sauce stock for 30-45 minutes or until cooked.
5. Add in 5-spice powder and continue to let chicken simmer for another 15 minutes.
6. Mix corn starch with 1 tablespoon of water.
7. Add corn starch mixture to chicken and let it cook for 5-10 more minutes.
8. Arrange onto plate and serve.
