Egg White Cheddar Cheese Cupcakes

These have been on my to do list for awhile, but I never made them because I couldn't justify throwing away 6 egg yolks. When I decided to make Tiramisu for Thanksgiving tomorrow, these popped up in my mind. Tiramisu requires 6 egg yolks which gave me 200g of egg whites, the perfect amount for these cupcakes. Mine didn't turn out quite as tall and beautiful as Aunty Yochana's, but they were still pretty yummy. If you're ever craving for something sweet and salty, these will do the trick!

100 ml milk
60g grated cheddar cheese
200g egg white (about 5-6 eggs)
1/4 tsp. salt
1/2 tsp. cream of tartar
80g sugar
80g cake flour
20g corn flour
30g melted butter
50g grated cheddar cheese - for sprinkling

1. Warm up milk and add in 60g of cheddar cheese
2. Whisk egg white, walt, and cream of tartar until fluffy and pour in sugar gradually. Continue to whisk until thick.
3. Fold in milk mixture, butter, and flour using a spatula.
4. Spoon into muffin cups and then sprinkle grated cheese on top.
5. Bake at 350 degrees F for about 25 minutes or until toothpick inserted into center of cupcake comes out clean.
