Chinese Pork Jerky

I sent DH off on the road with these Pork Jerky as he heads off to Harrisburg. They're easy to make and doesn't require much ingredients. I did make one big boo boo, left out a major ingredient, SUGAR!!!!!!!!!! ARGHHH!!!! No wonder when it came out of the oven, I thought it lacked the sweet taste and sheen appearance. Oh well, there is always a next time :D

Original Recipe from Little Corner of Mine
1 lb. minced meat, with some fats
1 1/2 tbsp fish sauce
1 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp cooking wine
1/2 cup sugar

1. Put minced meat in a big bowl. Add in the seasoning. Use Chopsticks and stir in one direction until minced meat becomes gluey.
2. Put gluey minced meat on parchment paper. Cover with a big cling wrap and use a roller to roll the minced meat to 2mm thick. (Do not use aluminum foil as it will stick!)
3. Put the parchment paper with minced meat, on a baking tray (I used a 40.6 x 30.5 cm tray and the jerky fit perfectly inside).
4. Bake in preheated oven at 125 degree Celsius for 20 minutes. Then increase the temperature to 180 degree Celsius and bake for about 20-30 minutes. Keep a close watch, as it burns easily at this stage.
5. Cool and cut into pieces.

I tried jerky with beef and chicken before. Will have to try pork too. Mine was too wet though because I was too lazy to convert the measurements from metric to English and just estimated.
