Melting Moments Cookies

These cookies are wicked, they literally melt in your mouth and then you're like "oh, I need to try another one because I didn't catch the taste the first time around". Before you know it, 6 cookies have gone down your esophagus, into your stomach and onto your butt (or in my case, onto my face). At first I thought these cookies weren't sweet enough, but the more I eat them, the happier I am with them. They are very addicting and tastes so good with coffee.

I added a couple drops of food coloring to make them peach roses. It would be prettier if they were blood red, but I didn't want to waste my tube of food coloring :(

178g unsalted butter, softened at room temperature
40g icing sugar (powdered sugar)
1/2 teaspoon pure vanilla extract
175g plain flour
40g cornstarch

1. With an electric mixer, cream butter and icing sugar together until pale and fluffy. Add vanilla extract and beat for a few seconds.
2. Sift the flour and cornstarch together over the butter mixture and mix until smooth.
3. Spoon the mixture into the piping bag fitted with a large star-shaped piping nozzle. Pipe into the required shapes onto a baking tray lined with parchment paper. Space the shapes well apart.
4. Bake the cookies in preheated oven at 180 degrees c for 10 minutes or until they are a pale golden color. Leave for a few minutes in the baking tray to firm up slightly before transferring to wire rack to cool.
